industrial brazier for sauces used, it is an automatic gas cooking system consisting of a round tilting tank to facilitate the unloading of the finished product and with a rotating mixing system to keep the mass in motion during cooking. the system was decommissioned in April 2022 but as you can see in the photos it needs a fix, in particular two burners have been patched up in an artisanal way. the system is from 2006 and was used to make Bolognese-style ragù working 200kg at a time, then the rice was cooked to make arancini starting from 80kg of product and reaching 200kg. dimensions: 280X170cm h200cm, brazier model 190X190cm h185cm, square and pump model 130X130cm h200cm, cooking interior Ø137cm, internal edge height 35cm
